To cap off Naptime Chef Pumpkin Week I am psyched to share a last, truly amazing, pumpkin recipe, as well as some great pumpkin recipes from fellow friends and bloggers. This Pumpkin Pie Fudge recipe was sent to me by my friend Char of Margarita & Chicken Salad fame. It is SO easy to pull together and is the absolute perfect seasonal treat this time of year. I whipped it up while my daughter was at school. Though, it takes so little time you can do it just about any time of day. I plan to make a big pan next week and serve at a casual dinner we’ll be hosting. These are perfect for entertaining!

In the spirit of Pumpkin week I also want to share some of my absolute favorite pumpkin recipes on the web. I am not kidding when I say every single one of these dishes tastes incredible. Recipe

Pumpkin Pie Fudge

a recipe from Char

Ingredients

1 ½ c. sugar
2/3 c. evaporated milk
½ c. mashed, canned pumpkin
2 T. butter
¼ tsp. salt
1 ½ tsp. pumpkin pie spice
1 (12 oz) pkg vanilla baking chips
2 c. miniature marshmallows
1/3 c. chopped nuts
1 ¼ tsp. vanilla

Instructions

Line an 8-inch square pan with aluminum foil: grease foil. Lightly grease bottom and sides of a medium saucepan with butter. Combine sugar, milk, pumpkin, butter, salt and spice in the saucepan. Stirring constantly over medium high heat, bring mixture to a boil and boil for 12 minutes, Remove from heat and stir in baking chips and marshmallows until melted. Add nuts and vanilla and pour into prepared pan. Chill until set. Cut into squares. Cover and store in the refrigerator.

    Loving the contest format, It’s kind of like a scavenger hunt…LOL.
    I was already planning to make tons of pumpkin stuff this week. Tis the season! Here’s the one I wound up making first: Crazy Easy Curried Pumpkin Soup. It’s pumpkin and soup so double whammy for the season. :) Love your blog!

    I just saw the pumpkin challenge week which is a fantastic idea! I’m obsessed with pumpkin and every fall I try to find as many dishes as I possibly can to include pumpkin in. So far this week I’ve made homemade pumpkin ice cream, pumpkin pecan pancakes, and eating tons of puréed pumpkin with warmed milk and spices for breakfast. I’m excited to add the pumpkin pie fudge to the lineup!
