The Naptime Chef Cooking Show with OXO: Artichoke-Lemon Pesto

Welcome to the second episode of The Naptime Chef Cooking Show!! This series of three cooking shows is made possible with support from OXO and features recipes from my new book. My first show featured my recipe for Couscous with Tomatoes & Arugula. This episode features my Artichoke-Lemon Pesto from my Side Dishes & Salads section and features the awesome OXO measuring cups, a great OXO citrus juice, and a handheld mandoline. The final cooking show in this series will be rolled out in two weeks will each have more giveaways for awesome OXO tools and my book. We’re also going to be having fun Facebook contests and Twitter parties so stayed tuned!

    potato and artichoke pie is nice, and they are lovely on pizzas, or mixed in a salad with lemon/parsley dressing, very versatile.

    Roasted Artichoke Hearts & Garbanzo Beans……the fastest  way is with frozen hearts and canned garbanzos… rinse them both and pat dry…. mix EVOO and  garlic ….spread on a sheet pan in a very hot oven and  roast until they start to  brown.   Fresh is even better but it takes much longer.  YUM

    I often get fresh artichokes, cook them and eat the whole thing with a little lemon butter. But if it’s a dish you want, then it would be spinach, artichoke dip. Or a chicken artichoke pizza with white sauce.

    I love artichokes in a simple hot dip I make.

    I like artichokes, but I LOVE the hearts.  My favorite way to eat the hearts is in fresh pasta with a little olive oil, Parmesan cheese, and a twist of lemon.  Simple but totally delicious.
