Coconut Chai via The Naptime Chef

This is the latest installment of my Powernap column. The series where I share quick, easy food that can be made for all kinds of situations. Powernaps are short and sweet, and so are these recipes. These are the things I make in a jiffy when I need a quick snack, am in the mood for a recipe experiment, or simply need to clean out the pantry.

I love chai tea in the morning. In the summer I drink it over ice and in the winter I drink it warm with milk. When I ran out of regular milk the other day I decided to try adding coconut milk instead. I don’t need to stick to a dairy-free diet or anything, but I love the flavor of coconut and I certainly wasn’t about to run to the store for milk at 6am! Luckily, my little experiment turned out to be a tasty treat. I did my best to whip the milk into a froth with a whisk (I’ve put this to my Christmas wishlist!), added it to the hot tea, and topped it all with a pinch of cinnamon. The naturally sweet coconut milk was the perfect compliment to the spicy tea and was just the way to start the morning.

I swear, it is indispensable. Sure, I have a regular tea kettle but it never, ever brings water to a boil as quickly as an electric one. You all should enter to win one, you will love it!

Recipe

Dairy-Free Coconut Chai

Ingredients

1 chai tea bag (I used Stash)
1 tablespoon vanilla simple syrup*
3 tablespoons lite coconut milk
1 pinch cinnamon

Instructions

1. Place the tea bag in a mug and pour hot water over it. Steep for five minutes, the remove and discard. Stir in the simple syrup or (*honey is also a good sweetener in lieu of the syrup) and stir until completely dissolved.

2. Warm the milk in a small saucepan or in the microwave until it steams just a little bit. Stir the warm milk into the chai and top with a pinch of cinnamon.
