Tortilla Crusted Tilapia Tacos with Sea Cuisine

I am frequently asked about preparing fish on weeknights. It seems a lot of people think that seafood needs such special handling that it should be reserved for cooking on weekends or nights without time constraints. I always beg to differ with this opinion, preparing seafood for a quick weeknight meal is so easy! One of the ways we enjoy seafood on any given evening is by picking up frozen fish that has already been prepped like this Tortilla Crusted Tilapia from Sea Cuisine. It is not that I am trying to skirt preparing the fish, it is just that Sea Cuisine actually takes the time to prepare the fish correctly and the flavors are delicious. Plus, it is a company I can stand behind since they fiercely committed to sustainability, a cause that is deeply important to me.

The Naptime Chef Fish Tacos

To kick off our seafood cook-a-long I am sharing my favorite preparation for Sea Cuisine’s Tortilla Crusted Tilapia – in fish tacos, of course! It is particularly fitting that we enjoyed these the other day since mother nature just dumped 35-inches of snow in our driveway. Fish tacos make me think of summer and that is exactly what I needed the night I made them!  One of the keys to preparing these with ease is the Sea Cuisine Tilapia. I used the Tortilla Crusted version, but I am sure the Coconut Crusted Tilapia would also be delicious. Recipe

 Tortilla Tilapia Tacos

serves 4

Ingredients

4 fillets Tortilla Crust Tilapia by Sea Cuisine
8 soft flour tortillas
2 limes
½ cup sour cream
½ cup fresh salsa
1 cup shredded lettuce

Instructions

1. Preheat the oven to 375 degrees F. Place the fish fillets in a lightly oiled baking dish and bake for about 28 to 32 minutes. Remove from the oven and allow to cool for five minutes.

2 To assemble the tacos: Use a fork to cut the tacos into bite size pieces and divide each fillet evenly amongst two flour tortillas. Scatter some shredded lettuce over each tortilla, followed by a teaspoonful of salsa, a dollop of sour cream, and a squeeze from one wedge of lime.

3. Note: The beauty of tacos is that you are able to adjust the flavors according to your tastes. If you like a spicy taco use a spicy salsa or add a few pieces of chopped, de-seeded jalapeno pepper. If you prefer not to use sour cream a dollop of guacamole or slice of avocado would taste terrific as well.

    Love fish tacos and have eaten a lot in Southern California. May I suggest trying shredded white cabbage instead of the lettuce. It’s common in SC. I also use ranch dressing as a topping quite often. Fish tacos are really good with freshly heated corn tortillas.

      Hi! Thanks for the suggestions. I love the idea of cabbage and maybe a ranch dressing. The corn tortillas would be delicious. I will try when I make them again!

    Hey Kelsey, This looks totally yummy and you are so right – I’m one of those people who think of fish as a weekend food. I don’t think I’ve ever seen Sea Cuisine in my local grocery store, but I’ll look more closely next time I’m there.
