Salmon & Pesto with BumbleBee SuperFresh™

It is pretty rare these days that I get time to myself. With two kids and a busy household the four of us are always running to and fro to activities and commitments. However, on rare occasions, I find myself at home with both the kids in bed and a little extra time on my hands. This typically happens when my husband is traveling for work or at the office late into the night. When this happens the first thing I do is make myself a nice meal. It is not about cooking anything fancy or involved, just something easy and nutritious to finish the day off right.

Cooking for one might not be the top priority for most people, but I love it. I usually pull something out of the freezer and serve it over some pasta and fresh vegetables. I also use it as a time to try something new that I don’t know if my husband would enjoy or not. Last month I received some samples of the delicious Bumble Bee SuperFresh™ salmon and was psyched to give it a try.

For my meal for one I decided to cook the Salmon with Pesto and serve it with crunchy green beans on the side. I was all about a nutritious, easy meal that wouldn’t take long to prepare. This new product from Bumble Bee®is so perfect for a quick weeknight meal because it is frozen at the source, which means it is incredibly fresh tasting, and it only takes twenty minutes to bake in the oven.

While the salmon was baking I trimmed and cooked up some fresh green beans and served them with some toasted pine nuts from a little extra crunch. I knew they would pair perfectly with the cooked fish.

Once the fish was baked I served it up next to the green beans accompanied by a glass of wine. The fish flaked gently under my fork and had the appearance and flavor of a beautiful salmon fillet I would usually find at a fancy restaurant. The pesto had a classic basil flavor and wasn’t overly oily.  The fillet itself was perfectly fresh tasting.

Eating my simple salmon meal was a rewarding, peaceful moment at the end of a long day. With the hectic pace of summer coming up I can easily see myself turning to this fish over and over again when I am in need of a special meal for myself when the day is done. I could also see making several of these fillets for a delicious meal with friends. They would be delicious served up on a platter with potatoes, salad, and asparagus on the side. Whatever your reason for making it, this easy dinner is bound to please everyone this summer.

Recipe

Pesto Salmon with Crunchy Green Beans

Ingredients

1 package Salmon with Pesto
½ pound green beans, trimmed
2 teaspoons pine nuts
1 teaspoon extra virgin olive oil

Fine sea salt

Instructions

1. Preheat the oven to 400 degrees F. Place the salmon in an oven proof baking dish and bake for 20 minutes, according to package directions.

2. Meanwhile, bring a small pot of salted water to a boil. Add the green beans and cook for about 5 minutes, or until they are easily speared through with a fork. Drain the water and run the green beans until ice cold water until they are cool to the touch.

3. Place the pine nuts in a dry skillet over medium heat at toast them carefully for about 4 minutes, turning them with a wooden spoon so they toasted evenly.

4. In a small bowl toss the pine nuts, green beans, and olive oil with a pinch of fine sea salt.

5. Place the salmon on a large plate and serve the green beans on the side.
