Celebrating National Grilled Cheese Day with Arla Dofino Cheese

I hope you all celebrated National Grilled Cheese Day yesterday! I’ve been celebrating it all week on behalf of my new roll this spring as the national spokesperson for Arla Dofino cheese. I am so excited about this partnership because I am a bona fide cheese nerd and I totally love their product. Last week I celebrated the beginning of our partnership with a launch in New York City at an amazing food space called Freshmade. In honor of National Grilled Cheese Day, I worked with Arla Dofino to create a few upgraded grilled cheese sandwiches featuring the brand’s delicious Creamy Havarti cheese. The cheese melts beautifully and is an easy upgrade on a traditional grilled cheese. You may have even seen my #HavartiParty images from Arla Dofino’s Grilled Cheese Day celebration this week!

One of my favorite things about Arla Dofino is that is is naturally good, free of added hormones and crafted with quality, natural ingredients. If I am going to be picky about the milk I let my children drink (and trust me, I am!), I am also going to be picky about the cheese they eat.

Ingredients

  • Havarti & Arugula Pesto Grilled Cheese
  • Pesto Ingredients
  • 1 cup packed arugula leaves, stems removed
  • ¼ cup walnut halves
  • 2 garlic cloves, peeled
  • ¼ teaspoon kosher salt
  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup olive oil
  • Sandwich Ingredients
  • 2 slices country bread
  • 1 ½ tablespoons unsalted butter, softened
  • 1 tablespoon arugula
  • 2 thick slices fresh tomato
  • 1 Arla Dofino Havarti cheese slice

  • Havarti & Pear Grilled Cheese
  • 2 slices sourdough bread
  • 1 ½ tablespoons unsalted butter, softened and divided
  • 2 ounces Arla Dofino Creamy Havarti cheese
  • ½ ripe pear, cored and thinly sliced
  • Prosciutto & Fig Havarti Grilled Cheese
  • 2 slices sourdough bread
  • 1 ½ tablespoons unsalted butter, softened and divided
  • 1 tablespoon fig jam
  • 2 pieces thinly sliced prosciutto
  • 1 Arla Dofino Havarti cheese slice

Instructions

  1. Directions for Arugula Pesto Grilled Cheese:
  2. 1. To make the pesto: In a food processor fitted with a blade attachment, combine the arugula, walnuts, garlic and Parmesan cheese. Pulse twice to combine. Pulse a few more times while pouring the olive oil down the feed tube. This makes about half a cup. Whatever is not used for the sandwich can be stored in the refrigerator for future use.
  3. 2. Place the two slices of bread side-by-side and spread the top of one with ½ tablespoon of butter. On the second slice, spread arugula pesto and top it with two tomato slices and 1 slice of Arla Dofino Havarti cheese. Close sandwich with the buttered bread slice, butter side up.
  4. 3. Add the remaining butter in a nonstick skillet and place over medium heat. Swirl butter so it coats the bottom of the pan. Place sandwich in skillet, with non-buttered bread side down and cook until the bread is toasted and golden brown, about 4 to 5 minutes. Flip the sandwich and cook the other side for an additional 3 to 4 minutes, or until golden brown. Remove from the skillet, slice and serve.
  5. Directions for Havarti & Pear Grilled Cheese:
  6. 1. Place two slices of bread side-by-side and spread the top of one with ½ tablespoon of butter. On the second slice, layer Arla Dofino Creamy Havarti cheese, followed by the thinly sliced pear. Close the sandwich with the buttered bread slice, butter side up.
  7. 2. Add the remaining butter in a nonstick skillet and place over medium heat. Swirl the butter so it coats the bottom of the pan. Place sandwich in skillet, with non-buttered bread side down and cook until the bread is toasted and golden brown, about 4 to 5 minutes. Flip the sandwich and cook the other side for an additional 3 to 4 minutes, or until golden brown. Remove from the skillet, slice and serve.
  8. Directions for Prosciutto, Fig & Havarti Grilled Cheese
  9. 1. Place two slices of bread side-by-side and spread the top of one with ½ tablespoon of butter. On the second slice, spread fig jam and top it with prosciutto and cheese. Close the sandwich with the buttered bread slice, butter side up.
  10. 2. Add remaining butter in a nonstick skillet and place over medium heat. Swirl butter so it coats the bottom of the pan. Place sandwich in skillet, with non-buttered bread side down and cook until the bread is toasted and golden brown, about 4 to 5 minutes. Flip the sandwich and cook the other side for an additional 3 to 4 minutes, or until golden brown. Remove from the skillet, slice and serve.
