Dinner Routine Solutions for the Holidays

Let’s face it, it is tough to get healthy dinners on the table every single night of the week. But it is even harder during the holiday season. If your family is like ours, there are tons of after-school activities, late nights for work travel, and all sorts of holiday-themed homework. On top of that there is spending every extra spare minute getting things organized for the holiday season. Every so often I give myself a break when this craziness rolls around and order a box from Blue Apron. Since this year I anticipate a festive holiday ham, I decided to choose a boxed of mixed vegetarian, seafood, and poultry to enjoy for the week. I loved that all three recipes featured seasonal ingredients. One night I even made dinner and my college age babysitter ate it with the kids. Over the course of the week I made a vegetarian bucatini dish with caramelized onion and fennel and lots of kale (pictured above). I am not usually a kale fan, but this was delicious!

Salmon with Sprouts

We loved the simple salmon with farro. I am always a fan of simple seafood meals that really highlight the flavor of the fish.

Greek Chicken Thighs

We wrapped up with a simple braised chicken thighs dish. Tasty and full of vegetables. My favorite!
